Silo, the newest restaurant to the MVT, opens today. A blend of contemporary American cuisine with a French & Swiss twist. We got a sneak peak last night at the soft opening.
The ambiance has a warm industrial feel, with exposed brick walls, reclaimed wood, and industrial fixtures. The only art work in the dining room are 3 black & white paintings by artist Ali Soltani, a good friend of Owner Reza Akhavan who painted them specifically for Silo.
The tables are adorned with tea lights and the cloth napkins are farm house style. Waitstaff all wear long striped aprons reminiscent of a french bistro, but their seemingly unofficial uniform of casual jeans and converse give the dining room a casual feel.
What we tried:
Ginger & the Skipper (Lemon, Ginger Ale & Liqueur, Mezcal) Light and citrusy a perfect start to the meal
Sage Spirits (St. Germain, Sage, Blueberries, Vodka) Nice blueberry flavor with a kick of sage on the finish
Kohlrabi Soup (Gruyere Cheese Fondue, Fennel Jam, Bacon Strips) Perfect amount of creamy and savory with caramelized kolhrabi reminiscent of a caramelized onion and topped with a perfectly cooked piece of bacon.
Chicken Croquettes (Prosciutto, Buffalo Mozzarella, Assorted Salad) Crispy coating with tender and moist chicken inside.
Meaty Crab Cake (Lobster Foam, Tarragon) Tender meat, perfectly formed and a generous size.
Pork Ragu (Paprika, Sour Cream Sauce, Grilled Rapini, Pepper Tagliatelle) The pork just falls apart in your mouth and the perfectly cooked tagliatelle is a nice mix of flavors.
Veal Neck Roast (Porcici and Swiss Chard, Rosemary, Mustard, Fall Squash Quenelies, Cranberry Mascarpone) Cooked to perfection the veal neck was flavorful with rich sauces and light rosemary taste. The creamy fall squash and cranberry mascarpone add a sweet & savory taste making this the ultimate in French style comfort food.
We’re excited to have Silo in the neighborhood and look forward to trying out the whole menu.

Tuesday-Thursday, Sunday: 5pm – 10pm (kitchen), 5pm – 1am (bar)
Friday and Saturday: 5pm – 11pm (kitchen), 5pm – 2am (bar)
